The New York Times posted this fall harvest butternut squash pie in the recipe section recently. I thought that it sounded intriguing and boy, is it amazing! It does take some effort to pull together so I did it in stages over the course of a day. But I followed the recipe thoroughly and was so happy with the results. I used one of the butternut squashes in my CSA!
I think this could be a very versatile recipe that you could swap out vegetables for other vegetables. For example I think this would be yummy with butternut squash and potatoes.
