Zucchini Pie


3 cups diced zucchini
1/2 cup diced red pepper (optional)
1 med to large onion, diced
1/2 cup grated Parmesan cheese
1/2 cup cottage cheese
1/2 cup vegetable oil
1/2 cup biscuit mix (like Bisquick)
4 eggs, beaten
3-4 Tbsp of minced parsley
1 tsp salt
1/2 tsp pepper


You can also add some meat, if you wish, diced ham, sausage crumbles, bacon, smoked turkey.

Grease a 9″ pie plate or a 9 x 9 dish. Combine all ingredients until zucchini are coated with batter. Bake in a 350 oven for 40-45 minutes until golden brown.

Serve hot or cold.

I often exchange the cheese and vegetables, according to what I have on hand.
