Our oven has been on the fritz so I haven’t been able to bake since Christmas dinner. I found this fabulous recipe from Ozlem Warren’s blog for a borek that I had in Adana, Turkey from a street vendor. These are easy to make and yummy. My husband served his with sliced lemon.

Franco Harris’s Lasagna
Actually it is his mom’s recipe from the Three Rivers cookbook. Many Pittsburghers have made this over the years. I opted to eliminate the meat to have a vegetarian version with noodles, sauce, cheese and egg. It’s a yummy and satisfying vegetarian dish for a holiday dinner. Recipe: 3 large cloves garlic1 large onion1/2 tspContinue reading “Franco Harris’s Lasagna”
Zucchini Pie
Last fall, Zucchini Pie was my favorite go to lunch. It goes together quick since it uses a quick bake mix. The recipe can easily be modified according to whichever vegetables and ingredients are in refrigerator. This version has zucchini, tomato, banana peppers and feta cheese. 3 cups sliced zucchini1/2 cup sliced banana pepper (optional)1/2Continue reading “Zucchini Pie”
Cheesy Cauliflower Quiche
I asked one of my friends what her go to Thanksgiving vegetarian recipe was. She sent me this recipe, which came from Wilson Farm many years ago. Sunday Breakfast Pies
I haven’t posted for a while but I need to post these two beautiful pies. I made a ham and cheese quiche without a crust. I also used phyllo pastry to make an apple and brown sugar pie. Recipes to follow soon.
Vegan Class
Today I signed up for a vegan quiche and falafel class at a nearby senior center. This is a total pie reimagined pie! I was fed a super healthy lunch as a result. The quiche consisted of tofu instead of eggs to bind it together. This version contain spinach, mushrooms, red peppers, onions, shallots, andContinue reading “Vegan Class”
Local Foods
I’m a big advocate for shopping at local food stores. This year on Good Friday I decided to try some of the local food shops in Worcester instead of spending the day baking. Our first stop was Helen’s bakery. It is a wonderful Italian bakery that makes you feel like you went to your grandmothersContinue reading “Local Foods”
Ham and Cheese Hand Pies
The March challenge in my pie baking group is hand pies. This was a recipe that I made up as I went along. I tried making hand pies in February without great success. Cheeseburger Pie
To my knowledge, this recipe really doesn’t have a name but someone recently posted it in a site that I follow. I remember that my grandmother would make this with which ever vegetables she happen to have on hand. I’m calling this a cheeseburger pie. My family loved it when I made this for aContinue reading “Cheeseburger Pie”
Crustless Breakfast Quiche
We were up early this morning to go skiing so breakfast needed to be ready fast. This quick and easy crustless breakfast quiche came together quickly. I used oat milk instead of cow milk and a vegan cheese to avoid dairy. I think it was the best quiche that I have ever made. Crustless BreakfastContinue reading “Crustless Breakfast Quiche”
