Happy PI Day!

Mulberry Pie

I haven’t been baking for a while due to a broken oven and some family circumstances. However some frozen mulberries made me want to bake a special pie for PI Day (3.14).

Recipe
Double pie crust
3 c. mulberries
1.25 c sugar
0.25 c flour
vanilla extract for brushing inside of pie crust
1 t. sugar for bottom of pie crust
1 T. milk for brushing top of crust

*Mix the mulberries, sugar and flour in a bowl. Set aside.
*Oil the bottom of a pie plate. I used a 12″ shallow plate from Emile Henry. Line the plate with a pie crust. Loosely drape over the sides. Brush the inside with vanilla extract and then sprinkle sugar inside.
*Pour berries in the pie crust.
*Cover the top of the pie with the crust. Seal and crimp the sides. Brush the top of the pie with milk.
*Let pie rest in the refrigerator for 30 minutes.
*Place the pie in a preheated 400 degree F oven and bake for 15 minutes. Reduce heat to 350 degrees F for 30 -45 minutes. The pie is done when it is bubbling and the top is nicely browned.
