Zucchini Pie

Last fall, Zucchini Pie was my favorite go to lunch. It goes together quick since it uses a quick bake mix. The recipe can easily be modified according to whichever vegetables and ingredients are in refrigerator. This version has zucchini, tomato, banana peppers and feta cheese.

Impossible pie

3 cups sliced zucchini
1/2 cup sliced banana pepper (optional)
1/2 cup feta
1/2 cup vegetable oil
1/2 cup biscuit mix (like Bisquick)
4 eggs, beaten
3-4 Tbsp of minced parsley
1 tsp salt
1/2 tsp pepper

Directions:
Grease a 9″ pie plate or a 9 x 9 dish. Layer ingredients in the dish and then pour the batter over until the veges are coated with batter. I added a bit more cheese to the top. Bake in a 350 oven for 40-45 minutes until golden brown.

Serve hot or cold.

I often exchange the cheese and vegetables, according to what I have on hand. You can also add some meat, if you wish, diced ham, sausage crumbles, bacon, smoked turkey.
