Hot Turkey Pot Pies

I wanted to make a quick dinner post Thanksgiving with all of the remaining vegetables and turkey that was leftover. Using store bought puff pastry that I always keep in the freezer, I made these yummy turkey pot pies.

This can literally be made with whatever you have on hand. For me, that was corn, green beans and frozen peas. I then chopped up some onion and carrots. (If you use fresh veges, dice thinly so they cook quickly.) I then mixed it in a sauce pan with leftover gravy and broth. You can use water with a tiny amount of flour if you don’t have anything on hand. I spooned the mixture into the baking dishes. Covered with puff pastry and a tiny amount of cheese. Hey, I love to make things extra yummy.

Bake for 20-30 minutes in a preheated oven set to 350 degrees F.
