Cheesy Cauliflower Quiche

I asked one of my friends what her go to Thanksgiving vegetarian recipe was. She sent me this recipe, which came from Wilson Farm many years ago. I could tell this was a favorite as the photo was of a rather loved sheet of paper. The recipe is called Cauliflower Bake. However after making it, I realize that it is more of a quiche.

Blanche chopped up head of Cauliflower in salted, boiling water for approx. 5 minutes until tender.
Place cauliflower in a greased 1.5 quart baking dish. I used olive oil since this is savory but the recipe calls for butter.
Pour over a combined mixture of 3 eggs, 1.5 C. milk, 1.4 t. salt, 2 T. oil or butter, cayenne pepper (to taste) and 1.5 C shredded cheddar cheese. I had thinly sliced cheddar so I just placed it on the top.
Bake at 325 degrees F. for 40-45 minutes until the custard is set. I added a few extra minutes of 375 degree F heat to crisp up the top a bit.
Let it set for 5 minutes before serving. I served mine with sliced banana peppers and tomatoes.
