Back at Baking!

This summer I took unintentional hiatus both from baking and blogging. However with fall weather in the air (a crisp 40 degrees this morning with wind), I suddenly have started baking again.

On the menu in my house is this fabulous cobbler with plums, peaches and apricots. I tend to use the same pastry recipe but vary the fruit, according to what I have on hand.

Stone Fruit Cobbler

I wanted to take a lovely photo of the entire pie but my son cut into this before I had a chance!

I’m posting the topping recipe here. Honestly I didn’t really do much with the bottom fruit besides a dusting of sugar. Everything was already really sweet.

Topping
113 g. butter
136 g. all-purpose flour
100 g. white sugar
2 teaspoon baking powder
128 g. milk

Mix the dry ingredients together in a bowl then cut in the butter with a pastry cutter or two forks. Mix in the milk.

In the bottom of a deep dish pie plate, add the filling to the bottom of the pie plate. Scoop the topping onto the filling.

Place into a 350f degree oven for 50 minutes, or until the filling is bubbling and the top has nicely browned.
