Vegan Class

Today I signed up for a vegan quiche and falafel class at a nearby senior center. This is a total pie reimagined pie! I was fed a super healthy lunch as a result.

The quiche consisted of tofu instead of eggs to bind it together. This version contain spinach, mushrooms, red peppers, onions, shallots, and garlic. It was baked for 10 minutes.

The falafel was made using reconstituted chick peas. I have made falafel using dried chick peas before but I like this version as it cuts down on a step. She did not cook the chickpeas since she baked them in the oven.

During the class I asked the instructor about using tofu to make a vegan, healthier crust instead of butter or shortening. The instructor had never tried it but I found a recipe, which I will try soon. Always on the hunt to reimagine pies!
