We were up early this morning to go skiing so breakfast needed to be ready fast. This quick and easy crustless breakfast quiche came together quickly. I used oat milk instead of cow milk and a vegan cheese to avoid dairy. I think it was the best quiche that I have ever made.

Crustless Breakfast Quiche
Ingredients:
8 eggs beaten
Approx 8 oz shredded cheese of your choice. I used vegan cheese to avoid dairy.
Diced ham or crumbled bacon
Splash of milk or a vegan non-flavored milk. I used oat milk
Directions:
*Beat the eggs in a bowl with a splash of milk.
*Add the other ingredients to the bowl. Mix with a fork.
*Pour the egg mixture into a greased tart or pie pan.
*Bake at 350 degrees F for 40-45 minutes. The quiche should firm.
