More posts to come later today but I’m quickly getting this recipe out in case someone is looking for a lovely breakfast. This can further be individualized on each plate. Many of us put sriracha on top. My son had olives on the side. My husband had a nice serving of feta cheese. Overall this was a great breakfast but I can think of ways to remaster it in the new year to make it healthier.

Ham and Cheese Quiche
Preheat oven to 350 degrees F
The ratio of milk to egg is 1/4 cup of milk to 1 egg. You can easily increase or decrease the recipe if you omit or add ingredients. This recipe makes a 9” tart pan but you can easily scale to your pan.
3 eggs, beaten
3⁄4 cup milk
salt and pepper
1 cup ham, chopped
1 cup shredded cheese (cheddar, mozzarella, or any combination to your liking)
1 unbaked pie shell. I like to use a press in oil crust.
Directions:
*Grease tart pan with canola oil. Place pie shell into place and press into place.
*Arrange ham and cheese in the bottom of the tart pan.
*In a bowl, beat eggs with milk, salt and pepper in bowl. Pour into pie shell.
*Bake at 350 degrees F for 45 minutes, or until just firm and nicely browned on top.
