Homemade Focaccia

It is a sort of pie, right? A tomato pie? I decided to make a version of the lovely sheet pie that I have been eating for the last week. The recipe that I followed was a no knead recipe from Bon Appetite.

I added roasted cherry tomatoes, fresh basil, and olive oil to the entire sheet pan then added grilled onion, garlic and roasted pepper to half of the pan. I also used olive oil instead of butter to grease the pan because I oddly don’t have any butter on hand.

I paired the roasted tomato pie with Turkish red lentil soup, which was perfect for a rainy early fall Sunday.
