My new favorite pie crust

Today I acquired a new cookbook full of pie recipes. I posted a cover the the book – Desserts from the Famous Loveless Cafe by Alisa Huntsman. I made the Easy-as-Pie Dough. AMAZING! This is my new favorite for sweet pies. If you have the book, this recipe is on page 51.

This recipe makes enough dough for 1 double 9″ crust or 2 single – crust pies.

2 cups flour
1/2 cups confectioner’s sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 sticks (6 oz) cold unsalted butter, cut into small pieces
2 egg yolks
2 Tablespoons cold milk (I needed to use 4.)

1.) Please dry ingredients into a food processor and pulse briefly to mix.
2.) Add butter to food professor and pulse until it resembles coarse corn meal.
3.) Add egg yolks and milk. Process until the dough is evenly moistened. Do not process into a ball, or it will be tough.
4.) Remove dough from food processor onto counter. Form into a disk OR divide into half and form into a disks.
5) Wrap with plastic and refrigerate for at least 30 minutes.
