This is my version of a Peach, mulberry and blueberry galette with a buckwheat crust. I have a ton of peaches from the Peach Truck which came to my area.
Best news is – the Skins are on the peaches and you cannot tell!!! I asked this question in my colleague group. They had mixed feelings of leaving the skins on the peaches. Someone suggested that I try a pie to see what I think. This is really fabulous! Now I will freeze bags of peaches for the winter.
