I’m late in posting about the fabulous online class that I did through the 92nd Street Y with Kate McDermott. We made a coconut chiffon pie. I’m smitten with smooth texture of chiffon. Kate is an amazing instructor and following her lead, it is easy to master baking. This one has a chocolate cookie crust with a coconut chiffon filling and a topping of whipped cream and coconut.
This class was so much fun that I made 2 pies! I wanted to give one to my neighbor, Debbie, for her birthday. I can’t wait until summer to celebrate summer flavors with this pie.
