So I made another buckle today. I’m a big fan of using up extra ingredients so I was trying to finish some buttermilk that I had left from making a chess pie as well as some extra peaches, pears and frozen berries. During the winter, this is one of my favorite treats.

Buttermilk Buckle
2 c flour
1 t baking soda
1.5 c brown sugar
8 T unsalted butter
1 large egg
½ t vanilla
1 c buttermilk
3 c fruit
Mix the wet ingredients and then the dry ingredients. Incorporate the fruit into the batter by folding it in. Pour into a greased baking pan. I use a spring form pan but you could use any baking dish such as a pie plate, casserole dish or baking sheet
Put into a 350 degree oven for 45 minutes. An inserted toothpick should come out dry.
