
Ringing in 2021 by following tradition is extremely important this year more than ever. I made my special pork and sauerkraut in the slow cooker that draws from my Pennsylvania heritage. I surveyed my friends and family to see how they were preparing their batch. The results were as varied as you’d imagine. Some folks used a broth of beer or white wine, ham broth, beef broth, or water.
This year the batch used kielbasa as well as dumplings. My mom reported that she made home made bow tie pasta for her pot.

Pork and Sauerkraut
There are no exact measurements for this recipe. It is a mosh pot of flavors.
Pork – can be ham, pork (roast, loin, pork chop, shoulder), sausage, kielbasa. Some folks add hot dogs at the end.
Sauerkraut – This year I used two small cans that I rinsed well. I’ve used fresh or jarred sauerkraut before.
Chopped onions and tomatoes – saute well and then add flour to make a roux or zaprska.
Salt and pepper
Cook all ingredients in a pot or slow cooker. I added left over beef broth and white wine this year.
