This year I wanted a simple pie as a dessert for Christmas dinner. I made an amazing filling using the recipe from Libby’s using the new pumpkin pie recipe. I used a pie crust that I had frozen from my 92Y class with Kate McDermott. I rushed it and I didn’t prebake the crust! I thought that i had enough over overhang.
