Buttermilk Buckle

Christmas eve was special this year as we had time together. School had the day off and I had the day off of work. I wanted to make a special breakfast pie but decided to make a buckle. This one is mixed fruit consisting of peaches, pears and blueberries.

2 c flour
1 t baking soda
1.5 c brown sugar
8 T unsalted butter, melted
1 large egg
1/2 t vanilla
1 c buttermilk
3 c fruit

Mix the wet ingredients and then the dry ingredients. I quickly beat in the melted butter into the eggs to temper them. Incorporate the fruit into the batter. Pour into a greased baking pan. For this buckle, I used a spring form pan. You could also use a pie plate.

Put into a 350 degree oven for 45 minutes. An inserted toothpick should come out dry.
