
I took an amazing class tonight with Kate McDermott through the 92 Street Y! No only was the class entertaining but I also learned some great tips! This class will kick up my skills up a notch.

Here’s what I learned! She used scissors to cut the edge! We pre-baked the crust. I had been using a small jar of pie weights and learned that I haven’t had enough weights to keep the crust in place! Kate showed us a mix of beans, rice and other legumes that she has reused. I grabbed lentils as I had a HUGE bag from India Market.


We made the crust then blind baked for 20 minutes. We filled the crust and baked for another 30 minutes.
I love the tenting technique that I learned. Kate ripped some openings in foil then draped it over the pie! I’ll demonstrate this tomorrow. Here is a quick pic for now.
